Behind Lines Part 2

Today’s peek behind the line at Panchero’s is all about the tortilla press. If you’ve checked out Jonah‘s post about the DoughPro 2000 over at the Burrito Blog, you’re already familiar with what it does. Basically, two heated platens press your soon-to-be-tortilla in just over 2 seconds, then that fresh-made tortilla is spun onto the grill before you pick out all the ingredients you want to stick inside. 

I went into the Coralville, Iowa store one morning with Joe, one of our franchise consultants. Joe has been doing this for a while. My experience was, well… non existent. The dough was a little cold and the press had just finished heating up, so our tortillas weren’t turning out too well. In the video below, you can compare our attempts with the perfect pressing of the lunch crew. Clearly they’ve got this down. Check out the video and then taste one for yourself!
